Recipe #320: Baked Sweet Potato

I am so out of practice! It has been a crazy, busy, horrible month. But May is just around the corner and hopefully the showers of April are behind me!
I decided to not to go all the way to the beginning of the month but I will catch up on those when i have time...I am already behind from last week!

I don't think I have done baked sweet potatoes yet!

You need:
3 sweet potatoes
1/2 lb ground beef
shredded cheese 
sour cream or greek yogurt
barbecue sauce
  • microwave sweet potatoes for 6-8 minutes depending on the size
  • meanwhile, brown ground beef. 
  • drain fat then add some barbecue sauce and mix up.
  • top potatoes with sour cream, beef, and cheese.
  • enjoy with roasted veggies!

Recipe #235: Roasted Pork and potatoes

Well, I need to work on timing well with pork tenderloin because it always takes way longer then I think! But it turned out pretty delicious in the end so it was worth the wait! I found it here!

You need:
1 tsp cumin
1 tsp garlic powder
1 tsp oregano
1 tsp coriander
1 tsp thyme
salt
1 lb pork tenderloin
3 large potatoes
1/2 red onion
4-5 cloves of garlic

  • mix cumin, garlic powder, oregano, coriander, thyme, salt together
  • cut up potatoes and onion into big chunks
  • stick potatoes, onions and garlic cloves in bottom of roasting pan sprinkle some olive oil and tiny bit of sprice rub on top
  • rub spice mix all over pork and pat in so it sticks.
  • put pork on top of potatoes
  • roast at 450 for about 1 hour or until done
I forgot to take a picture, but the potatoes were so nice and crispy and pork was great too!

Recipe #231: Hamburger Skillet Supper

Will decided on ground beef and then I was left with the decision of what to do with it! I didn't have much time in between my run and needing to leave for Bible study, so I found this recipe here and it seemed easy enough!

You need:
1 lb ground beef
2 large potatoes
2 cups of corn
1 can of cream of mushroom soup

  • start browning meat
  • peel and dice potatoes
  • add potatoes, corn and soup to meat when mostly browned
  • stir and cover for 10 minutes
  • stir again, turn on low and simmer until potatoes are soft and beef is done.

Recipe #219 and #220: Japanese Style Hamburger and Sesame Fries


It would be more japanese to eat this with rice, but I wanted fries and Will wanted beef so this is what we came up with! I found the recipe for the hamburgers here, but of course changed it because I didn't have tofu or mushrooms

You need:
1 lb ground beef
1 tsp salt
1 tsp pepper
1 egg, slightly beaten
1/4 tsp nutmeg
1/4 cup mirin
2 Tbsp soy sauce
1/4 tsp ground ginger
sprinkle of garlic powder

  • mix ground beef, salt, pepper, egg and nutmeg together
  • form into 6 small patties
  • mix up mirin, soy sauce, ginger, and garlic powder
  • put a bit of olive oil in pan then brown both sides of beef for about 2 minutes a side
  • turn heat to low and cover. cook for 5 minutes.
  • pour mirin mixture over hambugers. Move pan constantly so sauce doesn't burn.
  • turn burgers to get evenly coated. Sauce forms a glaze on the burger.
  • burgers are done when there is no sauce left in pan
Sesame Fries:
You Need:
3 russet potatoes
olive oil
sesame oil
ginger
salt
sesame seeds
  • Cut up potatoes into long strips and put into a ziploc bag
  • add olive and sesame oil, sprinkles of ginger, salt and sesame seeds
  • bake for 25 minutes at 450 on a greased baking sheet.

Recipe #204: Scalloped Potatoes

We are had fun visiting family in Ohio and my sister let me help out with some meals to not get too far behind in my recipes! :) I used this recipe as my base, but added cheese and bacon. LOTS of bacon, thanks to my husband and brother-in-law!

You need:
6 potatoes, peeled and sliced into thin rounds
1 can cream of mushroom soup
1 1/4 cup milk
1 onion, diced
1 cup cheddar cheese
bacon, as much as you want

  • layer the sliced potatoes and diced onions in a greased 9x13 baking dish
  • in a small bowl combine soup, milk, cheese, and bacon
  • pour over potatoes
  • bake at 375 for about 60 minutes. after about 30 minutes stir it up and add some more cheese if you want!

Recipe #195: Barbecue with Baked Potatoes

Need a changed up for your normal baked potato? This was delicious!


You need:
potatoes
barbecue (buy some or make your own)
shredded cheddar cheese

  • microwave potatoes for 6 minutes or until soft 
  • top with barbecue and cheese!

Recipe #171: Croquette

I was so happy to realize today that I had forgotten to post this recipe! :) It was the perfect recipe to use up the  extra mash potatoes and even some of the veggies!

You need:
4-5 cups mashed potatoes
veggies--a frozen bag of mixed veggies would be great
1 egg, slightly beaten
6 Tbsp flour
2 cups or so panko
oil for frying

  • mix mashed potatoes and other ingredients
  • shape potato mixture into 8 equal sized oval logs
  • roll in flour and panko
  • meanwhile heat oil in a medium sized skillet to depth of 1/2 inch
  • work in batches and turn occasionally until brown and crunchy

Recipe #162: Garlic Herb Mashed Potatoes

You need:
5-6 potatoes, peeled and cut into big chunks
1 cup sour cream
1 Tbsp minced garlic
pinches (or more!) of rosemary and thyme

  • boil potatoes until soft
  • mix up garlic and herbs in the sour cream
  • Pour out water and mash potatoes up
  • add sour cream mixture and stir until smooth

Recipe #140 Rosemary Pork Tenderloin with #141 Roasted Broccoli and #142 Smashed potatoes


Okay, this was from a combination of places...
The idea for the pork tenderloin was from my Real Simple 10 ways... or found here.
the broccoli was from here thanks to pinterest!

for the pork tenderloin
you need:
pork tenderloin
olive oil
rub:
1 Tbsp or so rosemary
1 tsp paprika
2 cloves garlic crushed
1/2 tsp kosher salt

  • rub pork with olive oil
  • mix rest of ingredients together and rub over meat
  • bake at 425 for 30-45 minutes or until cooked through
  • cut and serve
broccoli
you need:
some broccoli
olive oil
kosher salt
pepper
4 cloves garlic
lemon juice
parmesan
  • spread broccoli out on a foil lined baking sheet
  • toss with olive oil, salt and pepper
  • top with sliced garlic cloves
  • roast at 425 (with your pork tenderloin) for about 20 minutes
  • take out and add a bit of lemon juice, a bit more olive oil and parmesan
smashed potatoes
you need:
4 red potatoes
minced garlic
chives
a bit of milk
parmesan
  • pierce potatoes in several places and microwave for 5 or so minutes
  • cut up, add a little milk and "smash" with a masher 
  • add in a bit of garlic, chives and parmesan
  • mix up a little more

Recipe #129: 30 min Twice Baked Potatoes

I knew I was going to make baked potatoes tonight, but didn't want to do the same thing again so I was looking at my Woman's Day cooking assistant app and found a recipe for twice baked potatoes...and then I used what I had to add my own spin to it! :) their website is not working right now or i would link it up!

You Need:
3 baking potatoes
1/2 cup of cheddar cheese
6 pieces of bacon
1/2 cup milk
spoonful of minced garlic
paprika
parsley

  • key to making this fast...clean and pierce potatoes and stick in the microwave for 10 minutes.
  • once done cut in half long ways and let cool
  • scoop insides of potatoes
  • mix in a bowl with milk, then add bacon, garlic, cheese, and some paprika
  • spoon back into the potato skins
  • sprinkle a little bit more paprika and some parsley on top
  • bake at 375 for 15 minutes
