Recipe #332: Curried Egg Salad Sandwich

Another Real Simple Recipe!

you need:
4 eggs
1/4 cup mayo
1/2 tsp curry powder
chives,
cucumber
2 tortillas
spinach

  • place eggs in water, bring to a boil, then turn off heat and cover. let it sit for 12 minutes
  • then run under cold water, peel and chop up
  • in a small bowl mix together mayo and curry powder
  • add eggs and mix together.
  • add chopped up chives
  • on a tortilla later some sliced cucumber and spinach, top with half of the egg salad



Recipe #330 and #331: Cinnamon Rolls and Spinach Tomato Scrambled Eggs

The boys slept in this morning, giving me sometime to make a good breakfast for when people started to wake up!


First the cinnamon rolls. I found the recipe here on the blog by the authors of my favorite bread and pizza books!

you need:
about a grapefruit size of bread dough (recipe found here)
mixture of cinnamon, sugar, and brown sugar (maybe like a handful of sugar and brown sugar and a couple pinches of cinnamon)
chopped up walnuts

  • take out dough and form into a ball. let it rest for 15 or so minutes
  • roll out into a 1/4 inch thick square. 
  • cover with sugar mixture, then walnuts
  • roll up and cut into the size rolls you want (I did six)
  • let it rest for 45 min to 1 hr 
  • preheat oven to 350 and bake for 25 minutes
Eggs:
you need:
2 eggs and 1 egg white
spoonful of feta cheese
spoonful of mozzarella
spinach, cut into thin pieces
1/2 roma tomato, diced
basil
  • in a bowl mix together all ingredients
  • scramble over medium heat until eggs are no longer runny

Recipe #279: Spinach and Feta Egg White Omelet

This came together because I was too lazy to grate cheese...so wanted to use Feta instead and now my life has been changed because of how wonderful the omelet was! :)


You need:
3 egg whites, beaten
spoonful of feta cheese
small handful of fresh spinach, chopped
rosemary and pepper

  • pour three beaten egg whites in a small pan.
  • allow the bottom to set.
  • add in pepper, rosemary, feta and spinach to the middle
  • fold the omelet in half
  • flip once or twice to make sure both sides are evenly brown and middle is cooked through
  • add a little more pepper and rosemary to the top!
so delicious!

Recipe #245: Egg Griddle Sandwich

This week was not a good one in the world of trying new recipes. Will was not at home most evenings and I didn't have the energy to cook a full meal for just me, so Alex and I had some pretty basic meals!
This morning I snapped out of my rut thanks to random leftovers in the fridge and not having any bread! :) 
Pretty much it was an scrambled egg between two thick pancakes. Will had made up the rest of the pancake batter and stuck the extras in the fridge for alex's breakfasts...he just needs to work on not burning the outside, but all in all they tasted pretty good.

You need:
1 egg and 1 egg white
1 slice of cheese
a tiny handful of shredded cheese
2 thick pancakes
  • mix egg, egg white and shredded cheese and scramble
  • heat up pancakes 
  • add slice of cheese and scrambled egg to the middle!

Recipe #145: Peek-a-Boo Breakfast

A quick and easy breakfast!

You need:
Bread
egg
butter for fry pan

  • cut a hole in the middle of the egg. i used a round cookie cutter
  • heat butter in a fry pan
  • when it is hot, put bread in pan then crack egg into the whole. 
  • some of egg will spread out underneath, but most will stay in the hole. 
  • after 5 minutes or so, flip to other side. 
  • cook until the yoke is mostly done
  • enjoy!
